Ingredients
1/2 cup uncooked quinoa, rinsed
1 apple, any variety but we recommend granny smith, cored and chopped
2 cups of water
1/2 cup no sugar added apple juice
2 teaspoons 100% pure maple syrup
1 teaspoon ground cinnamon
1/4 cup walnuts, chopped and lightly toasted
Instructions
Heat a sauce pot on medium low heat. Add the quinoa and apples. Cook for about 5 minutes stirring frequently. Add the water and apple juice and bring to a boil. Boil for 15 to 20 minutes or until quinoa is tender and water is absorbed. Remove from heat and stir in the maple syrup and cinnamon. Sprinkle with walnuts. Serve hot.
