250 gm chicken boneless
1/2 tablespoon coriander seeds
1/4 teaspoon fenugreek seed
2 sliced onion
1/2 tablespoon ginger paste
1/2 teaspoon red chilli powder
1 teaspoon salt
1/4 teaspoon garam masala powder
1/2 inch ginger
1/8 cup milk
4 tablespoon refined oil
1/2 tablespoon kasoori methi powder
2 sliced red chilli
10 chopped garlic
4 chopped tomato
1 teaspoon coriander powder
1/8 teaspoon dry mango powder
1/4 cup chopped coriander leaves
1 sliced green chilli
1/2 cup WaterFor The Main Dish
1/4 cup tomato puree
1/2 cubed capsicum ( green pepper)

How to make Kadhai Chicken

Step 1 Make coriander powder & fry the onion

Kadhai Chicken recipe is a perfect amalgamation of spiced chicken and creamy gravy. Here’s a simple recipe that will help you prepare this dish at home. Take a non-stick pan and roast the coriander seeds, once the seeds start crackling, remove and crush them thoroughly and keep it aside. Heat oil in a pan over a low flame, add red chillies and fenugreek seeds. Stir for a few seconds. Add the onions and increase the flame to medium. Cook till onions turn light brown. Add garlic and stir.

Step 2 Add ginger paste and chicken pieces

Now add ginger paste, coriander seeds, red chilli powder and coriander powder. Add chicken pieces and cook for 3-4 minutes on high flame. Stir to blend all the masala with the chicken. Now add the chopped tomatoes and cook for 3 minutes. Add salt, dry mango powder and garam masala powder.

Step 3 Cook until the chicken is tender

Cover the pan with a lid and cook for 10 minutes till chicken is tender. Stir from time to time and add the tomato puree. Then add the coriander leaves and cook for a minute. Now add the capsicum, tomato, ginger slices and green chillies. Mix well and reduce the flame. Add milk and mix. Add water to make it semi-dry and cook for a minute. Remove from heat and serve hot with rice or rotis.

Tips
If you have extra time, you can marinate the chicken in ginger garlic paste, yoghurt and spices for a richer taste.
If you are short on time, you can also choose to make the tomato puree with ginger, garlic and green chillies.
Do not forget to add coriander seeds, red chillies and fennel seeds in this recipe.

How to make Ginger Chicken Kebab

Step 1

To begin with this delicious recipe, wash the chicken pieces and let it dry for some time. Then, carefully, slice the chicken into cubes.

Step 2

Then, take a bowl and mix chicken breasts, green chili paste, white pepper powder, salt, ginger paste and malt vinegar into it. Using your fingers, rub the chicken pieces in the mixture from both the sides.

Step 3

Take another bowl and whisk the hung yogurt in it. Add the chicken pieces from the first bowl to the the second bowl i.e. bowl with yogurt.

Step 4

Let the chicken pieces marinade for about 30 minutes or so. Keep it aside for a while.

Step 5

Once marinated, take out the chicken pieces, place them carefully on the skewers and roast them over the grill for about 10 minutes or so.

Step 6

Ingredients of Tawa Chicken Fry

600 gm chicken boneless
1 tablespoon lemon juice
1 teaspoon garlic paste
1/3 teaspoon coriander powder
1/2 teaspoon fennel seeds
salt as required
3 tablespoon gram flour (besan)
1 teaspoon ginger paste
1/3 teaspoon powdered turmeric
8 leaves curry leaves
1/2 teaspoon cumin seeds
2 tablespoon refined oil

How to make Tawa Chicken Fry

Step 1 Wash and dice the chicken

Clean and wash the chicken under cold running water. Dice the chicken into bite-sized pieces.

Step 2 Prepare the masala

Mix gram flour, lemon juice, ginger-garlic paste, turmeric powder, coriander powder, curry leaves, red chilli paste, fennel seeds (saunf), cumin seeds and salt in a bowl. Add little water to the masala mixture and stir well.

Step 3 Coat chicken pieces in the prepared masala

Now add the chicken pieces in the masala mixture and mix until evenly coated. Make sure all the chicken pieces are well marinated with the masala mixture. Keep aside for 45 to 75 minutes.

Step 4 Fry the chicken pieces

Heat oil in a pan over medium flame and fry the chicken pieces until golden brown and cooked. Remove and drain excess oil.

Step 5 Serve hot!

Tawa chicken fry is ready. Serve with mint chutney and roti.

Tips

Don't forget to garnish your chicken with freshly chopped coriander or mint leaves.
You can increase or decrease the amount of spices as per your preferences.

LUMPIA (FILIPINO SPRING ROLLS)

Lumpia are Filipino fried spring rolls filled with ground pork and mixed vegetables. This lumpia recipe is authentic and yields the crispiest lumpia ever. Serve them as an appetizer or finger food, with a sweet and sour dipping sauce.




Almost every country in Asia has its own interpretation of spring rolls, or egg rolls in the United States. In the Philippines, spring rolls are called lumpia.

WHAT IS A LUMPIA?

Many people wonder what does lumpia mean? Lumpia is a Filipino word and it comes from the Chinese spring roll, with veggies (like cabbage and carrots), meats (usually pork), and/or seafood (sometimes shrimp) as the filling.




DIFFERENT TYPES OF LUMPIA

There are many types of lumpia, here are some of the most popular ones:

Lumpiang Sariwa refers to “fresh” lumpia with veggies and meat as the filling. You use a thin homemade crepe, instead of spring roll wrappers to wrap them.
Lumpiang Hubad (naked lumpia) is made without a wrapper.
Lumpiang Prito is Filipino fried spring roll with meat and a variety of vegetables as the filling.




HOW TO MAKE LUMPIA?

Below is the recipe for Lumpiang Shanghai with vegetables and ground pork as the filling. For serving, you dip them into Chinese sweet and sour sauce.

Lumpiang Shanghai are also thinner and smaller than its other fried counterparts. Lumpiang Shanghai are very easy to make as you just roll them up. They are perfect finger foods for parties!




DIFFERENCE BETWEEN LUMPIA AND EGG ROLLS

Lumpia is the Filipino version of fried spring rolls. Egg rolls are American version of Chinese spring rolls. Both share the same origin but they taste and look different, with egg rolls being bigger and “fatter” in shape.




CAN YOU FREEZE LUMPIA?

Yes, you can make lumpia ahead of time and freeze them in the refrigerator. In case you are wondering how long does frozen lumpia last? The answer is a long time. You can freeze them for months in the freezer without going bad.

Just make sure that you thaw them to room temperature before deep-frying.




HOW MANY CALORIES PER SERVING?

Each roll is only 65 calories.

LUMPIA (FILIPINO SPRING ROLLS)



Lumpia are Filipino fried spring rolls filled with ground pork and mixed vegetables. This lumpia recipe is authentic and yields the crispiest lumpia ever. Serve them as an appetizer or finger food, with a sweet and sour dipping sauce.

INGREDIENTS
1 package Lumpia wrappers (Chinese or Vietnamese spring roll wrappers meant for frying can be used) (25 sheets)
2 lbs. (1kg) ground pork
5 cloves garlic, peeled and minced
1 inch (2cm) ginger, peeled and minced
2 tablespoons soy sauce
2 eggs, lightly beaten
3 dashes ground black pepper
6 oz (170g) cabbage, thinly sliced

INSTRUCTIONS
Using a serrated knife, cut the square lumpia wrappers in half so that you have two stacks of rectangular wrappers. Place a damp paper towel over the wrappers to keep them from drying out as you work.
Combine the pork, cabbage, garlic, ginger, soy sauce, eggs, and black pepper in a large bowl. Using your hands, or a rubber spatula, mix the filling well so that the seasonings are evenly distributed.

Place one of the rectangular wrappers vertically on your work surface with the short edge facing you. Place a heaping teaspoon of the filling on the wrapper about half an inch from the edge closest to you. Grasp the bottom edge of the wrapper and roll it up and over the filling, continuing to roll until 2 inches of wrapper remain.



Dip two fingers into a bowl of water, then moisten the last 2 inches of wrapper with your fingers. Finish rolling the lumpia, then rest it on its seam. Continue rolling with the rest of the filling and lumpia wrappers.
At this point, you can freeze your rolled lumpia if you wish by placing them in freezer bags and then into your freezer.
To cook the lumpia, fill a large frying pan with about 1/2-inch of vegetable oil. Heat the oil over medium-high heat. Gently place the lumpia into the hot oil and fry until golden brown on all sides, 3 to 5 minutes total (if frying frozen lumpia, it will take 1 to 2 minutes longer).
Place the fried lumpia on paper towels and serve immediately with sweet and sour sauce (bottled from the store is fine).

You can also add finely minced raw shrimp to the pork mixture if you'd like. Also, instead of ground pork, you can use ground beef or ground turkey.

You can use Chinese or Vietnamese spring roll wrappers (for deep-frying) if you can't find lumpia wrappers.

Filipino Pansit Recipe

Pancit is a classic Filipino Recipe. It’s a quick and easy stir-fried rice noodle dish with a savory sauce, pork and vegetables.

Like many family recipes, this wasn’t written down, my dad just remembered that my grandma added a little of this and a little of that when she was making it. I jotted down the ingredients and instructions and set out to create it. The results were spot on and childhood memories flooded back. I love that about food.

What is Pancit?

In case you’re wondering, pancit is a traditional filipino noodle dish. Much like a stir-fry it is made with noodles, vegetables and meat.


And much like other stir-fries, you could use just about any combo that you like:

VEGETABLES: Cabbage and carrots are common. As are onions, green beans, celery and snow peas.

MEAT: Chicken, beef or pork as well as shrimp are common.

NOODLES: Traditionally, pancit is made with vermeclli rice noodles. The great thing about most rice noodles is that they simply need to soak rather than boil so it saves some time! That being said, you could use udon noodles, chow mein or pancit canton noodles if you can find them.

DES’ TIP: The key with any stir fry is to make sure that the vegetables are all cut uniformly so that they cook at similar times.



In this recipe, I use boneless pork chops, cabbage, carrots, yellow onion, green onion, and rice noodles.
How Do You Make Filipino Pancit?

STEP #1: Soak noodles according to package directions.

STEP #2: Cut pork and vegetables into similar sizes. Set aside.

STEP #3: Heat oil in a large skillet or wok over high heat. Add pork, onions, garlic and soy sauce. Cook just until the pork starts to brown.

STEP #4: Add in the vegetables. Pour in chicken broth, add noodles and cook until the liquid is absorbed.


What do you serve with Pancit?

One thing I love about stir-fries is that you’ve got your veggies and meat all in one dish already. BUT if you are looking for something to serve along side try some sauteed broccoli and of course, Filipino lumpia.

1 (8.8 ounce) package Thai Vermicelli rice noodles
2 tablespoons canola oil
1 pound pork chops (about 4 chops), sliced into bite size pieces
1 yellow onion, diced
6 cloves garlic, minced
2 tablespoons soy sauce
1 cup chicken stock
2 cups shredded cabbage
1/2 cup sliced carrots
3 diced green onions
kosher salt and cracked pepper to taste
